• Greek Yogurt Pancakes
  • My kids can seriously eat some pancakes. So, I am always looking for a healthier way to make them. My friend Mandy found these and I couldn't wait to try them. They were awesome. I did tweek it a little myself. Instead of flavored yogurt I used plain and added 4 packets of Truvia; I used a white wheat flour; and two egg whites instead of an egg; and if I would have been thinking I would have added a 1/4 c of ground flax to it. They were light and fluffy and didn't weigh you down like regular pancakes. We'll definitely be using this recipe again.

Instructions

  1. Mix yogurt and egg in a medium bowl until blended and smooth. Add flour and baking soda and stir until the dry ingredients are mixed in. The batter will be thick.
  2. Preheat a griddle or large pan to medium heat. Spray with nonstick spray.
  3. Use an ice cream scoop or 1/4 to 1/3 cup measuring cup to scoop the batter into the pan. Spread each of the batter scoops into an even circle. Dot blueberries or bananas on top of each pancake.
  4. Cook for about 3 minutes or until golden brown, then flip and cook the other side for about 2 minutes, until it is golden brown too. Repeat with the remaining batter. Serve with additional fruit and/or syrup.
  5. Notes: *For blueberry pancakes, use blueberry Greek yogurt and fresh blueberries. *For banana pancakes, use vanilla or vanilla-honey yogurt and fresh banana.
