Sweet Potato, Squash and Apple Soup (Crockpot Version)

Sweet Potato, Squash and Apple Soup
OMG easy and oh so yummy! I found this recipe folder up and crunched in the back of my recipe box. Glad I did a little organizing and found it. The recipe calls for sautéing and cooking and boiling...forget that! Take all the ingredients and dump them into a crockpot and 6 hours later all you need is a blender for your perfect soup. (As shown in the picture my 2 1/2 year old daughter took...no joke)

Oh My Treat! Just one or two of these little healthy bites are enough to satisfy that sweet tooth. Sweetened with dates and honey and a little protein from peanut butter...it is great for a quick little energy burst before a workout.

Bento Mini-Burgers

Bento Mini Burgers
Okay all you burger connoisseurs, here's one to try. My long time friend, Amanda, gave me this recipe. I have yet to follow a recipe to the letter, so I'll put it as it is written and anything I "tweeked" will have an asterisk next to it. Original Source: Pepperplate (www.pepperplate.com)

Super Cereal

This is a huge hit in our house. Lots of fiber and antioxidants. The beauty is that you can make endless creations. Wish I could take credit for it, but the original recipe below is from the Engine 2 Diet. However, you can use whatever fruit you want. We use blueberries, strawberries, bananas, kiwi, mango, cantaloupe, raspberries, blackberries in different combinations. For cereals, we also use the Fiber One twigs and Cascadian Farms or Kashi cereals. Tip: For ease we actually mix up the various cereals in a big container. About 1/3 of 4 boxes of cereal fit into a large cereal container. This is recipe is for 1 person, but it makes a huge amount! We made it according to the recipe below and we couldn't finish a bowl. We use about 1/2 - 3/4 cup of the cereal mix and only 1/4 - 1/2 banana, if we use one. Please note: Grapefruit is not compatible with many medications. If you are unsure, please check with your medical provider.

Greek Yogurt Pancakes

Greek-Yogurt-Pancakes-1-130x130
My kids can seriously eat some pancakes. So, I am always looking for a healthier way to make them. My friend Mandy found these and I couldn't wait to try them. They were awesome. I did tweek it a little myself. Instead of flavored yogurt I used plain and added 4 packets of Truvia; I used a white wheat flour; and two egg whites instead of an egg; and if I would have been thinking I would have added a 1/4 c of ground flax to it. They were light and fluffy and didn't weigh you down like regular pancakes. We'll definitely be using this recipe again.
