Granted, too much of any sweet treat is not the best for us. However, if you are going to indulge then why not try to get as much nutrition out of it as possible. This recipe was inspired by a recipe from Live Better America (www.livebetteramerica.com). I replaced the white sugar with honey and the canola oil with pureed avocado. (Yes, you heard right). Don't worry if the batter has a green hue...it won't look that way after it is cooked.

Greek Yogurt Pancakes
My kids can seriously eat some pancakes. So, I am always looking for a healthier way to make them. My friend Mandy found these and I couldn't wait to try them. They were awesome. I did tweek it a little myself. Instead of flavored yogurt I used plain and added 4 packets of Truvia; I used a white wheat flour; and two egg whites instead of an egg; and if I would have been thinking I would have added a 1/4 c of ground flax to it. They were light and fluffy and didn't weigh you down like regular pancakes. We'll definitely be using this recipe again.
